Recipes

Cream of asparagus soup

Ingredients:

  • 1 bunch of asparagus
  • 1/2 small onion
  • 2 avocados
  • 2 stalks celery
  • 1 tbs. chopped parsley
  • Kelp or Dulse to taste - 1/2 teaspoon
  • 1cup distilled water
Preparation: Blend until creamy.


Healthy spread

Ingredients:

  • 1 cup walnuts
  • 2 cups sunflower seeds soaked overnight
  • 1 small teaspoon salt
  • 1 cup chopped organic celery
  • 2 garlic cloves
  • 2 teaspoons chopped basil
  • 1 cup or less fresh lime juice
  • 1/3 cup olive oil
Preparation: Blend in food processor until smooth.

Can be served on cracker, on endive leaf, or stuff in very small red peppers.


Asian Vegetables (great with rice)

Ingredients:

  • 1/2 organic or homemade vegetable broth
  • 2 cups fresh broccoli florets
  • 1/1 cup fresh cauliflower florets
  • 1/4 head green cabbage shredded
  • 2 cups snow peas
  • 1/2 cup sliced organic celery
  • 10 shiitake mushrooms
  • 1 cup bamboo shoots
  • 1 cup water chestnuts sliced thinly
  • 1 small onion sliced and separated into rings
  • 1 red pepper
  • 2 tablespoon grated fresh ginger
  • You can add sprouts 1 cup
Preparation: Bring broth to boil over high heat. Add cauliflower, celery, broccoli, snow peas, ginger, and red pepper. Cook, stirring about 2 minutes. Add mushrooms and cabbage and continue to cook and stir another 1 minute. Add remaining ingredients and cook for 1 minute. Serve with rice.
